Gone are the sounds of crickets…hello to the sounds of college football and a crackling fire in the background. Sigh…I’m a happy girl!

The fall weather is officially arriving this week!

Now that the heat and humidity have finally ended, I have some outdoor projects that I’ll finally be able to start.

I’m making shutters for our home this fall and I can’t wait to see how much of a difference they’ll make.

One of my boys’ favorite things for me to cook this time of year is Chicken Stew. It’s even better the next day, but it doesn’t last very long in our house.

This is how Wikipedia defines Southern Chicken Stew.

My definition: Comfort in a bowl

Simple Southern Chicken Stew [aka Chicken Mull]

Simple Southern Chicken Stew [aka Chicken Mull]

Ingredients

  • 4 chicken breasts
  • 1 whole onion, chopped
  • 6 cups of reserved chicken broth
  • 2 cans evaporated milk
  • 2 tbsp butter
  • 2 tbsp chicken bouillon (Better Than Bouillon brand)
  • Salt and pepper to taste
  • Optional garnish: shredded cheddar cheese, green onions, and Texas Pete

Instructions

  1. In a lidded pot, bring the chicken breasts to a boil.
  2. Once boiling, turn off the heat, leave the lid on and let the chicken set for 30-45 minutes.
  3. Reserve 6-7 cups of the chicken broth.
  4. Remove the chicken from the pot and allow it to cool for 15 minutes.
  5. Chop or shred the chicken into very small chunks then add it back to the broth.
  6. Saute the chopped onion in a tablespoon of butter until slightly transparent.
  7. Add the onions, evaporated milk, butter, and bouillon to the pot.
  8. Season with salt and pepper to taste. Simmer for an hour. Garnish with shredded cheddar, diced green onions, and Texas Pete.
  9. Serve with saltines.

Notes

This simple southern chicken stew (aka Chicken Mull) recipe consists of chicken, onions, broth, evaporated milk, bouillon, butter and salt and pepper. Garnish it with chopped green onions, cheddar cheese, and a dash of tabasco for some heat. It's even better the next day if it doesn't all get gone the first night!

  1. I’m from a small town in NC and after the Christmas Parade and for sometimes for fundraisers for the local fire station we have an elderly gentleman that makes 2 huge batches of this in his cast iron cauldrons, outside over a fire. Best EVER. I can’t wait to make this for my family.

  3. This is very similar to what we grew up eating in the foothills of NC. The only difference is whole chickens instead of breasts and we usually added onion, potato and fresh corn that was cut in the traditional three cut method to get it off the cob. Oh and it usually was a WHOLE stick of butter. Brings back glorious memories!

    1. Hi! I haven’t tried The Beacon’s chicken stew yet. If you’ve been to Holden’s Ranch on Highway 295/Southport Rd., it is close to their recipe but not as rich. You can make the recipe more rich by adding heavy cream.

  8. oH Tricia I had forgotten all about chicken stew…. we used to eat it while living in NC and it is one of those dishes that I miss. I do believe I’ll have to make some up this winter! The lady at church who used to make it for potlucks almost always had southern biscuits as well. Thank you for sharing this recipe! I definitely know what I’ll be making soon!
